Summertime Salad in a Jar
One of my favorite summer combinations is watermelon and mint- whether in a salad or as a way to spruce up water. Totally refreshing and the perfect #BalancedBite to bring to the beach or park for an active day.
If you’re not familiar, making a salad in a jar is fantastic for a packed salad to go, complete with dressing. First, layer the dressing, then anything that won’t absorb the dressing and wilt (such as cheese and onions), and leave the most delicate salad greens on top. Before eating, shake the jar and pour it out onto a large dish.
1 Large Mason Jar (or any glassware)
Ingredients:
2 tbsp. balsamic vinegar
2 tbsp extra virgin olive oil
3 oz feta, crumbled
1/4 small red onion, chopped
4 cups watermelon, diced
3 fresh mint leaves, roughly chopped
1/4 cucumber, diced
salt and pepper to taste
1 tsp turmeric
3 cups baby arugula
