Hearty Slow Cooker Lentil Soup Recipe

This slowcooker lentil soup is so simple and versatile. You can throw all the ingredients in the cooker and go to work/school/whatever, come home five hours later and voila! Your entire home will smell heavenly. I hope you enjoy!
Serves 8
Ingredients:
2 cups carrots, sliced
2 cups eggplant, cubed (optional)
2-3 cups kale (optional)
1 cup parsley
1 cups celery, chopped
1 3/4 cup green lentils
1 onion, chopped
5 cloves garlic ,minced
8-10 cups vegetable or chicken broth
2 teaspoons herbs de provence or other spices
salt & pepper, to taste
Method:
1.Place all ingredients in the crockpot. Cover and cook on high for 5-6 hours or low for 7-8 hours.
2.Season to taste and to really go next level, serve with crusty multigrain bread and a little Parmesan cheese.
